I don’t know about you all, but I really enjoy Pinterest. It’s always a fun spot to turn to for seasonal inspiration. I do love it for decorating ideas, but even more so, I love it for recipe ideas. Well, some months back a friend & I were talking about our Pinterest boards & she pointed out how amazed she was at the number of pins I had. Yeah, over 2100 pins last I checked. she pointed out that it seemed like an overwhelming idea because how could I actually try or complete all those ideas?
Honestly, she’s right. I get so pin-happy because there are so many great ideas that I forget to actually TRY the pins. I’ll admit it, I’m a pin-hoarder. So…I shall be one no more! Once a month, if not more, I plan to try at least one of my pins, whether they’re crafty/DIY pins or delicious recipes. As I go, I’ll sort out the success from the failure & maybe I can cut down all the hoarding.
*Here’s the original recipe…I made a few tweaks to fit our family’s like & dislikes.
Today’s Pin: Slow Cooker Vegetable & Turkey Soup
Ingredients:
- 1 lb lean ground turkey
- 1 onion chopped
- 2 cups chicken broth
- 1 qt tomato juice
- 4 medium potatoes, diced
- 1 can garbanzo beans
- 1 can corn
- 1 can peas (I used white acre peas my mom & I canned earlier in the summer).
- 3 carrots, diced
- 2 stalks celery, diced
- salt & pepper to taste
Instructions:
- Brown turkey & chopped onion in a skillet
- Place cooked ground turkey & onion in a large slow cooker with all the other ingredients. Depending on the size of your slow cooker & how it cooks, you may cook it on low for 4-6 hours or high for 2-3 hours. **My cooker is only a 6 qt & cooks low, so I had to cook mine for 4-6 hours on high.
